![]() Today, we can all agree that the promise of a boom of endless IoTs everywhere has fallen short of expectations. The connectivity needs were confined to localized networks, such as Bluetooth and WiFi. ![]() As cost considerations often took precedence over user experience, manufacturers’ goals were to produce high quantities of these devices with basic functionality. While these IoT devices were groundbreaking for their time, they came with several limitations. These devices were often constrained by limited processing power and connectivity options. IoT devices used to be primarily designed to serve specific functions, such as monitoring environmental conditions, optimizing energy usage, or tracking inventory. The Early Days: IoT Devices with Limited Connectivity Before we dive into what this connectivity looks like today and how we came to design it the way we did, let’s briefly look at the past. They are now mostly Linux-based devices, such as connected mobility, connected robots, connected trackers, connected street lights, and connected payment devices that require continuous and ubiquitous connectivity. Rather, modern IoT devices, or “Connected Devices,” are much smarter. Today, “IoT” no longer refers to simple machines “just talking” to each other as it once was. ![]() The world of technology is in a constant state of flux, and the Internet of Things (IoT) is no exception.

The first is that potato chips are deliciously salty. There are two reasons why potato chips are so incredibly addictive. Why do you have no willpower for this crispy, salty treat? It’s only a matter of time before you sit down at your favorite brewery and see that adorable pug smiling back at you from the shelf. It never fails: You sit down with a new bag of potato chips, and despite your best intentions, they’re all gone before you know it. They’re grateful for the life and career he’s bestowed upon them, and have certainly hit the ground running with it here in Denver. The McSweeney brothers make it clear that they couldn’t have gotten the Denver chippery up and running without the guidance and support of their father, who has always had an entrepreneurial spirit. However, he was ultimately convinced by his sons to use the family dog, a pug named Zeus, as their mascot and logo inspiration. Mark says he originally wanted the company logo to be a duck, as homage to the Broad Ripple neighborhood in Indianapolis from which the company took its name. The brothers also take credit for the brand's pug mascot. “And it was us that brought it in,” Dylan pokes at his dad.īrother Connor agrees: “We completely engineered the Sweet and Spicy.” In fact, Mark McSweeney says he didn’t even debut the second flavor, Sweet and Spicy, until his third year of business. While just two flavors of chips seems minimal, the brothers say they like to keep it simple and don’t plan to expand the flavor lines any time soon. Networking at such events was pivotal in finding a distributor who’s now bringing them new business nearly every week. In addition to getting assistance from the West Metro Chamber of Commerce and Lakewood Office of Economic Development, they frequent events hosted by food-based trade groups such as Colorado Food Works and Naturally Boulder. Beyond the cost, the installation added the annoyance of permanent obstacles to work around while making chips.Īpproval to begin production finally came at noon on a Friday, but instead of going out to celebrate, the brothers called all their friends and worked nearly forty hours in one weekend to meet their first (and very large) wholesale order deadline for Whole Foods.Īll those challenges aside, the brothers say they’ve found a very supportive community for starting a small business here in Denver. So instead, they built a platform inside to install the unit overhead on the production floor. ![]() The building’s structure was unable to support a ventilation unit, normally installed on the roof, to remove potentially harmful fumes as the potatoes fry. They ended up digging a trench 75 feet to the closest water line to install bigger pipes to deliver the water they’d need to extinguish in the event of a fryer fire.Īt that point, they were close, but still not up to code. It was then determined that the gallon-per-minute water flow wasn’t high enough because it was being delivered through an old half-inch line. Two months into the buildout at their current production facility, they realized they couldn’t get the gas pressure they needed to power the industrial 35-gallon fryer, so the gas line had to be upgraded. They initially signed a lease with a large, spacious facility, but soon discovered the gas pressure was too low and couldn’t be fixed, so they had to back out of that location. While they never expected it to be easy, the hurdles to finding a production facility and bringing it up to code turned out to be a lot higher than originally expected. ![]() In 2017, the McSweeney brothers knew they had a winning product on their hands, so they took the family business on the road and headed west. Everything is made in small batches, and no preservatives are used in the process. Hot and fresh out of the fryer, the chips are dusted in one of two magical, proprietary seasonings: Original (with notes of garlic and onion) or Sweet & Spicy (punctuated by a nice kick of habanero). After slicing, the spuds are soaked in hot water to remove as much starch as possible, then fried in non-GMO oil. Russets have a higher sugar content, which results in somewhat caramelized, slightly darker chips that are richer in flavor than most other commercially produced potato chips. ![]() What makes them so delicious? It starts with the Idaho russet potatoes used to make the chips. The new brand can already be found at Whole Foods, Lucky’s Market (Boulder, Wheat Ridge, Longmont), Lolita's Market and a handful of breweries. It’s a bold proclamation, but no bolder than the explosion of flavor that comes with your first satisfying crunch of Denver Chip Co. chips. Past research singled out fried potato products as a dietary determinant of increased risk for early death, and a study published in December 2022 in Diabetes Care found that while plain spuds had no effect on the development of type 2 diabetes, mashed potatoes, french fries, and potato chips increased the risk. Mounting evidence may make you reconsider just how worth it that snack-size bag is. “The processing removes many of the natural nutrients present in the original ingredients.” And, she adds, they are traditionally fried in oils that are high in unhealthy trans fats and saturated fats, which research has found can raise cholesterol levels, contribute to heart disease, and increase the risk of developing other chronic conditions. “Chips are typically highly processed foods made from refined grains or potatoes, says Christa Brown, RDN, a registered dietitian in Woodbridge, New Jersey. Greasy, ultra-processed, and designed to make you exceed the given serving size, traditional potato chips stand out even among snack foods for how little they bring to the table. No matter how much you love chips, you have to admit they don’t have a lot of redeeming value when it comes to nutrition. |
